Some Sundays ago I wasn’t in the mood of cooking my lunch. After thinking what could I prepare myself with the minimum effort possible and with the few ingredients I had at home, I remembered a very healthy and easy recipe I saw on Facebook: a pizza with avocado and a fried egg.
I was lucky to have almost all the ingredients I needed: avocado, salt, olive oil and eggs. The only thing I was missing was the pizza dough. However, what I did have was pita bread! So I decided to improvise and it came out being very yummy! I see myself preparing this more often, especially in summer when you prefer eating something light but still delicious 🙂
So basically what I did was cut an avocado in half and mash just one half in a bowl. I added some olive oil and salt into the mashed avocado and then left it whilst I fried an egg. Once the egg was done, I just got one slice of pita bread, spread the avocado mash on the pita bread and finished placing the fried egg on top. Simple, right?
